Kale and Egg Breakfast (Dairy Free and Gluten Free)

There is so much kale growing I am putting it in almost everything.  To read more about the benefits of kale check out this recipe.  I enjoy this breakfast as it contains protein and many other essential nutrients which are a great start to any day.
Ingredients (serves 2-3 people)
  • 1/2 tablespoon oil, I used coconut oil
  • 4 eggs
  • 1/2 cup chopped kale
  • 1 tablespoon non dairy milk or water
  • dash of sea salt and pepper

Directions
  1. Heat skillet with oil.  
  2. In a small bowl mix eggs, milk and spices and set a side.
  3. Add kale to heated skillet and cook for 1-2 minutes until soft.
  4. Add egg mixture to pan and scramble together with the kale.
  5. Serve.
