Banana Muffins (Dairy, Gluten and Sugar Free)

A delicious muffin, great for breakfast or any snack.  You could substitute 1/4 cup of the rice flour for a 1/4 cup cocoa and create a chocolate banana muffin.

Ingredients
  • 1/2 cup teff flour
  • 1/2 cup brown rice flour
  • 1/4 cup tapioca flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon stevia
  • 1/2 teaspoon guar gum or xanthan gum
  • 1 teaspoon gluten free baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon gluten free vanilla
  • 1/4 cup melted coconut oil or grapeseed oil
  • 3 ripe bananas
  • 1 egg
  • 1/2 cup honey or other natural sweeteners

Directions
  1. Preheat oven to 350F and grease or line muffin cups.
  2. In a large bowl combine all dry ingredients (first 8 ingredients)
  3. Purée bananas, vanilla, oil, egg, honey and add to the dry ingredients.
  4. Gently stir just until combined.
  5. Fill muffin cups 3/4 full.  Bake for 20-25 minutes or until an inserted toothpick comes out clean.

I am using cast iron muffin cups (thanks to my father in law) so my muffins are a bit smaller.
