Ingredients
- 1 1/2 cup rice flour
- 1 cup almond or rice milk
- 1 teaspoon apple cider vinegar
- 1/2 cup tapioca flour
- 3-5 drops liquid stevia
- 1 teaspoon baking soda
- 1/2 teaspoon gluten free baking powder
- 1/2 teaspoon guar gum or xanthan gum
- 2 beaten eggs
Directions
- Preheat oven to 350F and grease a 9 inch pie plate or a oaf pan.
- In a medium size bowl, soak rice flour in milk and vinegar for 5 minutes.
- Add egg to rice flour mixture.
- In a small bowl, combine all remaining dry ingredients.
- Add dry ingredients into wet and gently mix until just till blended.
- Pour into prepared pan and bake for 25-30 minutes until golden brown and inserted toothpick comes out clean.
