Gluten Free Soda Bread (Dairy, Gluten and Sugar Free)

Irish Soda Bread is a quick, easy bread which is low in cost and ingredients.  It uses baking soda to make it rise instead of yeast.  This bread isn't traditional as I have added the eggs.   We often use this bread as a side for dipping into stew or make it fresh for breakfast with jam or honey.  It can also be adapted by adding your favourite spices, nuts or dried fruits.

Ingredients
  • 1 1/2 cup rice flour
  • 1 cup almond or rice milk
  • 1 teaspoon apple cider vinegar
  • 1/2 cup tapioca flour
  • 3-5 drops liquid stevia
  • 1 teaspoon baking soda
  • 1/2 teaspoon gluten free baking powder
  • 1/2 teaspoon guar gum or xanthan gum
  • 2 beaten eggs

Directions
  1. Preheat oven to 350F and grease a 9 inch pie plate or a oaf pan.
  2. In a medium size bowl, soak rice flour in milk and vinegar for 5 minutes.
  3. Add egg to rice flour mixture.
  4. In a small bowl, combine all remaining dry ingredients.
  5. Add dry ingredients into wet and gently mix until just till blended.
  6. Pour into prepared pan and bake for 25-30 minutes until golden brown and inserted toothpick comes out clean.
